Authentic and generous cuisine. Using local and seasonal products, Pauze's cuisine gives pride of place to its territory, French Flanders.


This


is not an "estaminet" (traditional Flemish café)! Here you will find


elaborate dishes in which local products have their place in recipes of


our French gastronomy, and are highlighted by a refined presentation,


sometimes in dishes to share like family meals.


Simple


local products are magnified, the short menu reveals the diversity of


the territory's resources, and the attentive service restores the


nobility of the French art of living, or rather, the Flemish!

is carefully thought out to enjoy a meal in a fully eco-responsible


way! Authenticity, terroir, and passion. In our cuisine, each plate


tells a story. The story of a carefully selected product, from committed


local producers, grown with respect and transformed with passion. Local


products rooted in the territory guarantee incomparable freshness, but


also support those who make our terroir live.


Located


in the heart of French Flanders, between Dunkirk and Saint-Omer, the


Hostellerie Saint-Louis is a place steeped in history. Dating from the


end of the 18th century, this manor, owned by the Vandekerkhove family, a


wealthy family of the region, was bequeathed to their only child,


Louis. Seeing himself without an heir, Louis Vandekenrkove decided to


give a new purpose to this large family home by transforming it into a


secular retirement home in the 1850s, before handing it over to the


commune upon his death.


For


many years, this historic manor of Bollezeele welcomed many residents


who came to enjoy their retirement peacefully. In 1970, a new life began


for this remarkable building, renamed the Hostellerie Saint-Louis,


which became a hotel-restaurant under the aegis of the Dubreucq family,


who ran the place for 50 years, under the sign of tradition.


2025


will be marked by the takeover of this place by Emilie and Michel


Bouchaert, both passionate about hospitality and determined to add


touches of modernity to this place steeped in history to make it a


beautiful family home open to all, where one can eat, sleep, celebrate


with generosity, spend quality time with loved ones, meet for pleasure


or for business, with the promise of a memorable service and customer


experience.
